Baked goods for the gluten-free diet can be daunting. Add in the dairy-free diet, and bread and desserts are almost non-existent unless you are a connoisseur of sorbets. Recently on a trip to Oregon, I discovered to my delight Kyra’s Bake Shop, a gluten-free bakery haven with an array of delicious pastries, cinnamon rolls, cupcakes, and more. Kyra’s now has two locations; the newest shop is located in Portland, while the original store in Lake Oswego in the Mt. Hood Territory.
About Gluten-free Bakery Owner Kyra Bussanich
Owner Kyra Bussanich developed dietary issues in her late teens. Like many of us, she sought medical help for an autoimmune disorder, and before going through major surgery, she decided to eliminate process foods and try going Gluten-free to see if that would solve her medical problems. It made a world of difference. She then experimented for herself, making baked goods with different flours. A passion for pastry developed and Kyra ultimately graduated from the Le Cordon Bleu’s patisserie program. While working as an assistance pastry chef, she would bake gluten-free cakes for her friends and family. Kyra’s custom catering business grew as friends spread the word.
Kyra was a multiple-time winner of the Food Networks Cupcake Wars, four times to be exact. Her first win on that show was impetuous to open her bakeshop. Today you will find an amazing assortment of baked goods plus quiche, sandwiches, and salads. Kyra’s is also 100% celiac safe. In addition, there are dairy-free options.
Kyra shows us that gluten-free baked goods do not have to be dry and tasteless. When you meet Kyra, you see the energy she exudes goes directly into her bakery. The sparkle in her eyes radiates through to the sparkles on her cupcakes and her other delicious baked goods.
One has to wonder how Kayra stays so trim with all the deliciously yummy goodies she offers. Her secret is dancing numerous times during the week. These include line dancing, western swing, and two-step.
Gluten-free Bakery Favorites
Some of my favorites from this gluten-free bakery were the Galettes, Cinnamon Rolls, and of course, her cupcakes. For those with the dietary issues needing gluten-free and dairy-free or must be celiac safe, you will have found your sweet spot. Like me, a person with many allergies, you will be in dessert heaven.
